“There is no exact way, there is no wrong way, it’s just one of those things — it’s an endless pursuit,” Ross O’Meara says as the half-hour film Wild Meat opens. He is talking about hunting for food, speaking in simple words that have unexpected depth. At the same time, the footage follows as he stalks a mob of fallow.
The Australian Deer Association (ADA) has just released this inspiring and educational video online.
It features Ross, who is a chef, hunter, author and ADA member. Ross described himself as a “massive advocate for wild meat” and he insists we should be eating more of it.
After a slow and reflective introduction, the film jumps to the point: the meat.
Ross begins breaking down a fallow hind leg into its various cuts, explaining it all clearly as he goes, and discussing ways to cook each one.
He whacks some into a pan to cook over a fire, and continues with corning, making schnitzels and more.
It is half an hour of solid education in preparing and cooking venison, and well worth the watch.
