US food website Dark Rye has posted in interesting video on ethical hunting, following Texan chef Jesse Griffiths as he takes a wild pig and then cooks it up.
More than a how-to on hunting pigs and cooking, the video also presents an interesting philosophy of hunting ethics.
“If you see an animal die or have a hand in that animal dying,” Griffiths says, “that’ll give you a bigger perspective about other things in this world.”
Griffiths also wrote the book Afield: A Chef’s Guide to Preparing and Cooking Wild Game and Fish, which is a pretty good guide for those wanting to learn new recipes for fresh game.
