Ozitech Knife Sharpener
A dull knife is worse than useless; it’s dangerous. Far more hunters cut themselves with a dull blade than a sharp one, because the dull blade cannot carry out its intended purpose. For years we persevered with a whetstone and a steel, which in in expert hands produced less-than-perfect results. Now we have a tool small enough to be carried in your pocket or daypack which sharpens and hones knives quickly in one operation.

Called the Ozitech, you simply pull your blade down and back through 8 diamondcoated Ozitech fingers to obtain perfectly set edge bevels and professional honing in one operation. The old fashioned method of honing by stroking the blade on a steel results in a different angle with every stroke which eventually results in a rounded edge, necessitating regrinding.

A blades edge and durability are not only dependent upon the type of steel it is made from and how it is heat-treated, but the methods used to give it an edge and how well that edge is maintained. Any blade is one large bevel, widest at the spine, gradually tapering to become thinner at the edge. The actual cutting edge is created by a thinner secondary bevel extending from the edge. Incorrect sharpening causes too much thickness directly behind the cutting edge. It is this angle or degree of taper that is important for sharpness and the ability to hold an edge.

It is essential that the tapered edge be consistent in angle and straightness from back to front. The amount of angle should be compatible with the type of knife and the uses it will be put to. Hunting and general purpose knives are best held at a 20 degree taper.
